    This afternoon, Jessie and I were preparing some hamburger meat for some chilli we are having this evening. As I was stirring it up, I was pondering how we normal it is for us to go to the butcher shop and ask for ground up hamburger. Well, I thought I would share one aspect that we learned early on about ordering our meat that way. If you don't ask for hamburger meat de puro res (which means pure beef meat) they will mix it with pork. I remember the first couple of times ordering it, and looking at the color being varied. The beef being more red and the pork with a light brown color. It turns out that it is cheaper to buy the mixed I guess. When you order ground beef, they will ask you if you want the fat as well. So if you say no they cut it all off before they grind it up right there in the grinder for you. It is fresh meat to say the least. It is never frozen. When you cook it up there is hardly any fat and grease you have to drain before you mix it up into something. For those of you who wonder how much that costs for 2.2 pounds of ground hamburger meat is roughly $7.50 making it around $3.75 per pound. I am not sure how much meat costs in the U.S. but we don't eat hamburger all that much. Maybe once or twice a week.
   
    When you live in what we call rural Mexico, people will only buy what they can afford to feed the family that day. When you live in a place where there isn't a lot of excess of money flow, there is no buying in bulk. The meat we buy is usually killed within the last day or two. We love this about the culture we live in. Most of what we buy on a regular basis is very fresh. It is diffidently is better for your health. We have thought about getting more animals to raise like pigs but not sure if we want to venture down that road.
